Meet My Meals- Brown Rice and Quinoa Pasta
Happy Monday to ya! Over the weekend I discovered another new food find at Trader Joe's! I picked up a package of gluten-free brown rice and quinoa pasta. I wasn't sure what the flavor would be like, so I decided to boil the noodles in vegetable broth to kick up the flavor quotient.
This pasta dish was quick and simple and made enough to last me for several days. All I did was saute some spinach and onions and added it to the pasta along with some sun dried tomatoes and seasoned it to my liking. Note to self to go easier on the sea salt when adding sun dried tomatoes since they give it enough of a salty bite.
