Happy Wednesday to you! With my time being spread so thin these days, it's vitally important for me to have quick and easy dishes I can put together when I do my weekly meal prep. A lot of the time I find myself eating the same dishes, just to make it easier on myself. However, it's important to keep what I'm eating exciting and I knew just my regular baked tofu wasn't going to cut it this week.

I hope you are doing well and prospering! I'm very excited to share my friend Susan's vegan journey. I decided to start calling these the "Vegan Journey Series". I really love getting a peek inside the journey of others as it relates to vegan living. Everyone has a different path and it's fascinating to me to get a glimpse of what that is and what veganism means to others.
